Managing Partner - Violet Hour

Over the last ten years Eden Laurin has made a name for herself in Chicago’s craft cocktail scene. While studying Italian and Journalism at DePaul University, the Warrenville, IL native began to moonlight as a bartender and fell in love with it. At El Cid, a Mexican restaurant located in the heart of Logan Square, Laurin began experimenting with different pairings and flavor combinations, creating her first original mixed drink, the Horchata-tini. After graduating from DePaul, Laurin headed to Guatemala to volunteer and started a school for children.  The experience was profound. After some time, she returned to Chicago and continued her non-profit work but stayed close to the bar, hosting and serving at The Violet Hour. Persistent bugging the bar team paid off, and she was finally given access as one of The Violet Hour’s first female bartenders.

In 2009, Laurin helped launch The Violet Hour’s sister restaurant, Big Star’s bar program, all the while continuing to study and make drinks at The Violet Hour. Her attention to detail, consistency and affability didn’t go unnoticed, and she was promoted to General Manager of The Violet Hour. In her new role, she continued to learn operations, hospitality and coordinated private events. In 2012, she helped define and shape Kendall College’s Mixology Courses and started SHE, a cocktail consulting company made of ladies. Next, she started Un-Laced, mixed nonalcoholic drinks focused on seasonality and flavor juggling, and set up shop at the Logan Square Farmers Market. Although she stepped away for a short time, to focus on photography, the allure of The Violet Hour’s velvet curtains drew her back in, and she rejoined The Violet Hour team as a Managing Partner. In 2015, Laurin and the team’s hard work was recognized, with a James Beard award for Outstanding Bar Program. In her current role, Laurin oversees the bar, off-site cocktail catering and continues to push boundaries, while remaining rooted in classic cocktail technique.
