Christopher Donovan is the great-grandson of famed Chicagoan Louis Glunz I who originally opened the Glunz Tavern in 1888. Christopher grew up in Chicago, and has lived in Old Town most of his life. He attended the University of Dallas where he received both his undergrad in Political Philosophy, and MBA in International Management. After graduating, he moved back to Chicago where he initially ran the House of Glunz Wine Shop, until he and his mother Barbara re-opened the Glunz Tavern in 2012.
As Managing Partner of The Glunz Tavern, Christopher has developed the extensive Bar selections including the Rare Spirits and Artisan Beer lists. Using the family’s collection of historic drinks books, he created the recipes for the Classic Cocktails. He incorporates seasonal ingredients and food items for The Glunz Tavern’s menu. In his spare time, he has developed excellent kitchen skills and is always learning new dishes and drinks to put on the menu. Christopher has his own garden on the building’s roof with herbs and small vegetables for use in the kitchen, as well as honey from his four beehives. He is very active in the local community, and is on the Board of Directors for the Old Town Merchants and Residents Association.
