Before opening Boltwood, Brian Huston ran the day-to-day kitchen operations of The Publican, as Chef de Cuisine where he worked under mentor and James Beard Award winning Chef Paul Kahan. Brian and Paul developed a close relationship when Brian worked on the line at two of Kahan’s other award winning restaurants ““ avec and Blackbird. Prior to his partnership with Kahan, Huston worked at The Kitchen in Boulder; Zuni CafÃ© in San Francisco; and Spiaggia and Heaven on Seven in Chicago.
Huston’s primary goal was always to return to his home town and help Evanston become the culinary hot spot that it is today. Huston says, “A chef once told me, if you love home so much, the best thing to do is get out of town and bring something back. So that’s exactly what I set out to do with Boltwood.”
Since June of 2014, Boltwood has allowed Huston to share his love of locally sourced and pristine ingredients served without fuss to his many home town fans.
Boltwood has received rave reviews from day one and Huston was recently nominated for the 2015 James Beard Award ““ Great Lakes Region.
Huston holds a B.S. from Ohio University. When he’s not working, Huston can be found at home watching his beloved Chicago Bears and cooking for his wife and four boys.
